Back in the Kitchen!
Becoming a vegan, so far my journey has been up and down. The first week was fine. The second week I could not resist chicken kebabs. Darn, but by the third week I was ready to finally become vegan. I did eat eggs for the first 3 weeks worrying about my blood sugar. So finally I decided I would try to eat a plant based diet. Not only vegan but as grain free as I could. I gave myself 2 weeks to see how I would feel. And guess what! I cant believe how good I felt. I felt full all the time, I did not have blood sugar drops just very level feeling with in my body. So of course I have stayed vegan. But I did introduce grains back in to my diet and mainly lots of corn. Which I am finding out is not good for me:( I also have figured out the garlic is a killer for my stomach. Wow how to figure out all these food restrictions.
One thing I am realizing is that staying home and cooking is a much better option for me. Which is sad cause its nice to be treated to a meal. Its been hard to even go to friend’s for dinner cause I feel bad not being able to eat what they have prepared. And I truly dont want to put anyone out. All of this has brought me back to the kitchen, which my husband and kids are happy about. I have been playing with different recipes. I created some of the recipes posted on my blog and will continue to post any recipes that i find and enjoy!
